Marilyn's Restorative Soup
(Serves 2)
Take 1/2 onion, 1 stick celery and 3 oz Kale, all chopped and cooked gently in a pan, with a little olive oil, until onions look tender.
Add 3 oz of washed red lentils, 3oz of any chopped ham, plus 1 pint of chicken stock and 1/2 a grated lemon zest.
Bring to the boil then simmer, covered for 15 minutes.
Sprinkle with parsley, stir up and then serve in warm bowls with crusty bread or crackers.
For more of a kick, add a smashed clove of garlic and a sprinkle of chilli flakes before simmering.
Enjoy and be restored!!

Sheila's Fruit Loaf
1 lb mixed dried fruit
1 cupful of clear strong tea
1 cupful of demerera or soft
brown sugar (or mixture of both)
2 cupfuls of self raising flour
1 egg
Soak 1lb mixed dried fruit overnight in the cupful of tea and add the sugar.
Next morning add the 2 cupfuls of self raising flour and the one wellbeaten egg. Mix well and pour into
a well greased bread tin (9"x5"x3")
Bake for 2 hours on the middle shelf at reg3, 170 (150 fan).
Leave until next day before cutting.
